Double Chocolate Mint Cookies

 

2/3 Cup of butter, softened

1 Cup of Sugar

1 Egg

1 Teaspoon Vanilla Extract

1 Cup of Flour

½ Cup of Cocoa

½ Teaspoon Baking Soda

¼ Teaspoon of Salt

1 2/3 Cups of Hershey’s Mint Chocolate Chips

 

Heat oven to 350 degrees.  Beat butter and sugar in large until creamy.  Add egg and vanilla; beat well.
Stir together flour, cocoa, baking soda and salt; gradually add to butter mixture, beating well.  Stir in
mint Chocolate Chips. Form rounded teaspoons of dough into balls and roll balls in small bowl with
approximately ¼ Cup Confectioner’s sugar.  Place on parchment lined cookie sheets and flatten slightly
using the bottom of a glass dipped in the confectioner’s sugar.  Bake for approximately 9 minutes; do
not over bake.  Cool slightly and remove cookies to cooling rack.  Makes approximately 2 ½ dozen cookies.  Enjoy!

 

(If you cannot find mint chocolate chips, substitute with a good mint chocolate flavored bar cut into small pieces.)
